I have a SC742i-420 chassis with seven CSE-PT18 drive trays. Can I use U160 drives on that?

No, SC742i-420 and CSE-PT18 are for IDE only. You can get a SCSI back panel CSE-SCA-013 and CSE-PT17 drive trays for SCSI hard drives.
