Can the M.2-NVMe-SSD on the AOC-SLG3-2M2 card have R.A.I.D. protection applied(ex.- mirror data from the first M.2-SSD to the 2nd M.2-SSD in R.A.I.D.-1 Mirror configuration)

Yes, you can apply R.A.I.D.-1 Mirror configuration to both M.2-NVMe-SSD drives installed onto the AOC-SLG3-2M2 card via Software for data protection. If there is a controller on the Motherboard that supports R.A.I.D., then you could possibly apply H/W-R.A.I.D. to both M.2-NVMe-SSD drives.  Be sure to check the appropriate Motherboard User Manual on the Supermicro online webpage for instructions.
Note:  The M.2-NVMe-SSD drives are not Hot-Swappable. The system must be powered-down(off) for removal or installation of the M.2-SSD installed onto the AOC-SLG3-2M2 card.
