If I built RAID-5 with 7 hard drives either through a dual channel SCSI backplane or a single channel SCSI backplane, which one would have better performance?

The one with dual channel SCSI backplane would have better performance due to saturation. When all 7 drives try to make way to transfer data through a single channel, they will have less "space" to perform their tasks while the dual channel will allow drives to transmit and receive data much faster. Think of it as 7 cars traveling in a single lane freeway versus 7 cars traveling in a 2-lane freeway.
