I have 2 Supermicro's boards based on Intel E7501 chipsets. The CPU's maximum core temperature is read differently on both boards - one has 78C while the other is 127C. Is it a BIOS issue?

No, this is not BIOS issue. The difference in temperature reflects the type of CPUs you are using. The 400MHz FSB CPU has a lower maximum core temperature at 78C while the 533MHz FSB CPU is rated at 127C. BIOS is simply reading the number from PIR.
