I have your X7SBU together with SC815TQ-560C chassis, I found out I ordered the wrong chassis and need the 560UB version. Can I just change the chassis rear I/O panel to resolve this issue?

No, this is not possible. The rear I/O panel is not the only difference between both chassis.
