Is it ok to use U160 SCSI HDDs in one channel and U320 SCSI HDDs on the other channel? Will the controller downgrade the speed of the U320 HDDs to 160MB/s?

Yes, it is okay to do so since both set of HDDs are conneted to different channels, the onboard controllers (SCSI and ZCR) will detect the correct speed on both and get respective performance.
