When I install a Celeron 1.4GHz CPU in your P3TSSA with the latest BIOS on your web, it shows up as a "PIII 1.4GHz". Is this correct?

Yes, all the Coppermine and Tualatin Celeron CPUs will show up as "PIII" in POST.
