I would like to check if my hardware configuration is Ok. I am building up a system with X8DTI-LN4F motherboard, riser card RSC-R2U-A3E8+. Could I put three PCI-E x8 cards on the riser card?

No, you can either install one PCI-E x8 card or up to one PCI-E x4 card and two PCI-E x2 cards.
