Can you tell me if a PWS-1K21P-1R 1200 WATT redundant ac power supply will fit in the Supermicro case CSE-748TQ-R1000.

No, PWS-1K21P-1R is not compatible with that chassis.To increase the power output of 748TQ-R1000, you can replace with a higher output power supply: PWS-1K41F-1R(1400W gold level), PWS-1K43F-1R(1400W platinum level) etc.
