After I install RAID with a RAID controller card on X7SB3, can I change the RAID controller card and keep the same RAID settings and RAID drives?

It depends. If you change it to the same model, you will have same RAID settings and RAID drives. If you change it to a different card (even with the same RAID controller chip), you might lose RAID settings. It is recommended to use the same RAID controller card.
