I have AOC-S2308L-L8i with the default IR mode FW. Can I update it to IT mode FW?

Yes, you can update IT mode FW without problem; please note you need to update it in UEFI shell. The latest version is at https://www.supermicro.com/wdl/driver/SAS/LSI/2308/
