We have SYS-620P-TR that have SATA and sSATA drives, and we're creating an array for the hypervisor on sSATA. Could you help us with the drivers to customize the media?

Intel VROC SATA/sSATA is software RAID.  Intel does not provide any SATA RAID driver for VMWare. In conclusion, SATA RAID would not work in VMWare, that's why you only see individual SATA drive through AHCI driver.  
If you want RAID for VMWare, then look for MegaRAID controller
