On our SYS-821GE-TNHR with H100 GPUs, what items in LSPCI would be the NVSwitches?

They would be nvidia items with device ID 22a3.  You can run lspci -tvvv | grep 22a3

There should be 4 NVSwitches found

 +-10.0-[03-08]--+-00.0-[04-08]--+-00.0-[05]----00.0  NVIDIA Corporation Device 22a3
                                                   +-01.0-[06]----00.0  NVIDIA Corporation Device 22a3
                                                   +-02.0-[07]----00.0  NVIDIA Corporation Device 22a3
